Cooked with fire, under the earth, and in community, curanto al hoyo is much more than a meal: it is a cultural experience that brings hosts and visitors together around the warmth of the fire, the rhythm of the landscape, and the flavors of the coast and countryside.
This experience takes place in the local community square, among the forest, hills, and estuary. From early on, the pit is prepared with hot stones, and the seafood, meats, potatoes, milcaos, and vegetables that will go into the heart of the cooking are selected, and everything is covered with pangue leaves. You have the option to actively participate in the mentioned stages if you wish. The aroma begins to emerge slowly, and in the meantime, we share a snack and stories about this ancestral practice of the territory, which has traveled through generations and is still alive in the rural kitchens of the south.
Curanto is cooked slowly, like everything valuable. At the moment of uncovering, the steam floods everything: it is a collective gesture of opening and celebration. We eat outdoors or indoors, depending on the weather, accompanied by natural juices, wine, and other delicious things.
