You take part in preparing a traditional curanto al hoyo with the Rollizo community, cooked underground with hot stones, just as it has been done here for generations. Weather permitting, while the curanto cooks, we head out onto the estuary by boat.
The stones are already hot when the preparation begins.
The pit is assembled step by step: shellfish, meats, potatoes, milcaos, and vegetables are arranged in layers and covered with pangue leaves.
You’ll take part from the beginning: preparing the fire, arranging the ingredients, and covering the curanto. Each step has its own rhythm.
As the heat works underground, the aromas begin to rise. Weather permitting, we board a boat and head out onto the estuary—a way to experience the landscape from the water while the curanto continues cooking beneath the earth. If the weather does not cooperate, the wait is spent sharing an aperitif and listening to stories about the territory, its people, the history of the estuary, and this tradition passed down from generation to generation.
The unveiling brings everyone together. The leaves are lifted, and steam fills the air.
You eat outdoors or under cover, depending on the weather, with flavors from both the sea and the countryside.
More than a meal, it is a way of coming together and keeping a living tradition alive.
